Braised Turnips
Yet another way to stretch your dollar with root vegetables, but keeping it flavorful. Here we use garlic scapes, available at farmer's markets in early summer, to liven things up a bit. If you don't have access to garlic scapes, substitute with garlic.
Ingredients
- 2 lbs. turnips
- 1-2 garlic scapes (if in season: if not, substitute 1 garlic clove, minced)
- 2 TBSP butter
- etc...
Preparation
Cook in turnips in water until tender
Cut into quarters
Add 1-2 TB butter to a frying pan over medium-low heat
Chop up 1-2 garlic scapes into pieces of about ΒΌ inch
(I freeze a bunch at this time of year)
Cook the scapes for about 2 minutes or so in the butter
Add the quartered turnips and saute about 5 minutes
